Nicolas Thomas, once a regular cellist for the Orchestre National du Capitole de Toulouse, is now a Michelin-star chef in Verfeuil.
Based on his experience as a professional musician, he has maintained fairly high expectations of the Ville Rose in terms of culture, and can now add culinary experiences to his list of demands.
How does Toulouse rank in terms of gastronomy?
It’s a culinary city. Toulouse and the surrounding region have several Michelin-star restaurants. I’ve noticed that the latest wave of Toulouse-based chefs is increasingly demanding. Even established restaurants can offer a more targeted service with great local products. This is what I’ve done since receiving my star in 2018; I’ve changed my purchasing policy to attract locavores.
